Let’s talk turkey….

By popular request…here’s Papa Bear’s recipe for doing a turkey on the BBQ. SO good! As always, post a comment and your entered to win the gift card/signed book drawing at month’s end.

  1. Several hours before you start to BBQ soak chunks of hickory wood in water.
  2. Season Turkey inside with salt, pepper
  3. Rub outside of turkey with peanut oil (helps with browning), season with salt and pepper. Tie wings to side and insert thermometer in thick part of breast.
  4. Heat 30 briquettes till red hot and place 15 on either side of Weber Barbeque. Place large aluminum pan in middle between coal pile and add about 1 ½ cups of water into pan.
  5. Place several pieces of hickory wood chunks on top of coals.
  6. Place top rack on BBQ and place turkey above aluminum pan. Cover.
  7. After 1 hour, add 5 briquettes and a few more wood chunks to each side. Cover once again.
  8. Continue this process adding hickory and briquettes every hour until turkey is done.
  9. Remove and let sit about 20 before carving.
  10. Drippings in aluminum pan can be used to flavor gravy if you like.
